I love camping, I love cook outs and I'm a huge fan of simple recipes with minimal clean up. When we go camping we are in a tent ... which means we don't have the glamping set up with an oven. One of my other favorite activities is finding ways to make meals while camping which either means cooking on a fire or using a small grill. Foil packs are the obvious answer to this problem. Foil pack meals tend to be simple to make, fast clean up, and minimal effort. With this in mind another important part of a good camping meal is ingredients that aren't super perishable. As far as refrigeration is needed, the only part of this recipe that might be an issue for is the cheese. If this is a problem for you because of cooler situations, I would suggest planning this meal early in the trip or using a cheese such as a nacho cheese cup or a velveeta cheese because they are shelf stable.
I topped my foil pack potatoes with dried chives. Fresh herbs would have definitely brought a much brighter flavor but they aren't quite as convenient to take camping as their dried herbs counterparts.
Maybe you aren't as obsessed with the idea of camping - this foil pack recipe works just as well in the oven or even on the grill in the backyard. And an added bonus... foil pack recipes make a very easy clean up.
Now there can't be only positives. The biggest drawback to foil pack meals is how hot the foil gets and the steam. Always handle these with oven mitts or tongs. Do not open the foil pack toward your face as these things get steamy.

Preheat grill to about medium heat (or the oven to 400F)
Prepare foil pieces by spraying with nonstick spray, set aside. This works well if you use a larger piece of foil which results in minimal seams
Cut potatoes into small chunks
Place potatoes in a large bowl, toss with olive oil, ranch seasoning, cheese, salt and pepper. Toss potatoes to coat
Place potatoes in prepared foil. Close up foil packet
Cook for 10 minutes per side
Check potatoes for desired done-ness
