Irish Potato Bites

Enjoy a taste of Ireland with these delightful potato bites! I made these for the first time for a St Patty's Day treat. I absolutely loved them. They are salty and creamy and pop-able. I ate so many of these things as soon as I made them and writing this recipe now makes me what to eat more. These would be great for a little party as an appetizer or side dish. If you like corned beef and potato skins there's a good chance you'll like this combination which ends up being a version of corned beef hash in little red skin potato cups.

It does take a bit of time to hollow out the insides of the potatoes but doesn't require much effort and can be accomplished easily with a spoon or a melon baller. If you're looking to cut down on the dishes and clean up I would suggest either spraying the baking sheet with a nonstick spray or using a silicone baking mat.

I used canned corned beef to make this recipe easier and I thought it turned out lovely. If you happen to have left over fresh corned beef this could be a fantastic recipe to use up the leftovers without eating the same meal over and over again. Baking the potato bites will make the tops a little crispy which is a wonderful texture component. However, if you're interested in more crispy bits you could sear the corned beef in a pan to crisp up a bit before adding to the cheese and corned beef mixture.

These little potato bites reheat well just add the sour cream topping as you go to ensure the sour cream doesn't become weird.

Description

Little potato bites filled with cheese and hash topped with sour cream and chives.

Ingredients
  • 20 whole small red potatoes
  • 1/2 cup corned beef
  • 1/4 cup cheddar cheese
  • 1 tbsp butter
  • 1/8 tsp salt
  • 1/4 cup sour cream (for topping)
  • chives
Instructions
  1. In a large pot boil all the potatoes until fork tender

  2. Preheat oven to 400 degrees

  3. Once potatoes are cooked and cooled enough to touch, cut in half and gently press potatoes onto a firm surface to flatten the bottoms so they stand up on their own

  4. Scoop out insides of potato halves and set aside

  5. Add cheese, corned beef, and butter to the bowl with the insides, salt to taste and mix

  6. Sprinkle salt over the potato halves and add mixture to each potato cup

  7. Place cups on baking sheet and bake for 10 minutes

  8. Remove from oven and top with sour cream and chivesĀ  before serving
