I have always loved ice cream sandwiches. Cookies and cream flavors are hard to beat in my opinion especially when they are a fantastic summer heat beating treat. However the price of the ice cream sandwiches vs the amount in the pack really leaves me wanting more. I love having little treats for myself and for when people come over to visit. I love trying new things and definitely enjoy a simple recipe.
This is a ridiculously simple 2 ingredient dessert. The longest part of making this recipe is waiting for the cookies to freeze. I made about 10 of these and ate them all almost immediately. I will be making an entire pack of these this weekend since I’ve decided this will be a staple dessert waiting in the freezer in bulk this summer.
One of my more controversial opinions might be that knock off oreos “Twist and Shout” chocolate sandwich cookies are actually better than oreos. For this recipe I used the Twist and Shout double stuff cookies. This recipe is so easy it would be a great project to involve kids with making. I’m also interested in trying different cookies and different dairy products to see what other combinations of ice cream sandwiches we can come up with. Perhaps a chocolate milk or an m&m cookie?

Soak cookies in the half and half

Place soaked cookies on a parchment paper or foil and put in the freezer for a couple hours. Enjoy straight from the freezer.
