I made these little bites before for Easter as an appetizer. They do require a little time to assemble but they make a decent amount. They aren't super unhealthy and honestly they're cute. You could serve these at a party and earn some fancy points. These could easily fit into a sushi night themed dinner without standing out. If you want to make them even more aesthetically pleasing you could garnish with fresh dill or serve with tiny skewers.
Some thing to keep in mind, these don't hold up well over time so definitely assemble with cucumbers right before you're ready to serve. Dry the cucumber slices after cutting and before adding the cream cheese. The cream cheese mixture does well to be made slightly ahead of time and sat in the fridge for the flavors to combine. If you're interested in taking these in a lunchbox or on a picnic I would suggest precutting the cucumbers and making the cream cheese mix but not assembling until it's time to eat. You could even treat this as a dip and top each cucumber portion with some smoked salmon. I personally like these bites with more cucumber and less cream cheese mixture, to me the texture is an important part of this snack.
It might take more time but in the future for more tea party vibes and to change up the recipe I plan on making this again with mini cucumbers either slicing into tiny disks or cut them in half length wise and assemble these to look like little boats.
Simple appetizer or quick bite that isn't too unhealthy
Whip cream cheese until soft. Mix in milk, dill, lemon juice, salt and pepper. Allow to sit in the fridge to allow flavors to combine
Slice cucumbers into disks about 1/4 inch thick
Spread a small amount of cream cheese on each slice of cucumber. Sprinkle with red onion and top with a small rolled up strip of smoked salmon
