This is a non-alcoholic drink that would be great for parties or sitting around a pool and can be easily scaled to make enough for a crowd. I used canned pineapple tidbits instead of fresh pineapple because of convenience.1 can of tidbits had enough juice and pineapple for the recipe plus a little extra. If you have time beforehand I would chill all the ingredients to make sure the drink is thoroughly cold so the ice doesn’t melt immediately and water down the drink.
I garnished mine with a strawberry stuffed with pineapple tidbits as well which in my opinion really takes the visual appeal to the next level. Since this drink is non-alcoholic it would also be a great summer drink to make with kids if they would like a yummy fancy looking drink which happens to be packed with fruits.

Make the strawberry portion by blending strawberries and pineapple juice, set aside in a separate dish
Rinse blender
Make the pineapple portion by blending pineapple, pineapple juice, coconut milk and ice
Optional - pour pineapple portion through a strainer
Combine the strawberry and pineapple portions in a serving glass
