Let’s start this story by going back in time a couple years. During my travels I found myself in a small artisan bakery, stood in line for about 30 minutes and promptly bought a massive box of goodies. And when I say a massive box of goodies – I do mean massive. I love small businesses, I love pastries and trying new things. So I walked out of this hole-in-the-wall bakery with a box that had to be tilted to fit out the door, I’m talking practically a wedding dress keepsake box. One of the goodies in this oversized box was basically an entire breakfast on a biscuit. It was fantastic.
Back to present times – I had a couple biscuits left over from a previous recipe and suddenly remembered that breakfast biscuit.
I made a super simple version which I would say was a smashing success. I’ve had them plain and with hot sauce and plan on making these fairly regularly in the future. I like the idea that they are an all in one meal that looks fancier than they actually are. There is a very small amount of ingredients and I tend to have all of them on hand most of the time. I also plan on trying puff pastry dough which would probably have more of a fresh pastry vibe but would require a bit more effort than the refrigerator biscuit. Do with that information what you will. Perhaps you can try the puff pastry and the biscuit.
I feel like this is a wonderful option for when you have overnight visitors and the breakfast should be quick but not cereal level. Serve some of these with fresh fruit, yogurt parfait, sausage links or a side of avocado … honestly do all the things, have a buffet to impress the guests, impress yourself.
Hope you enjoy this very easy recipe because I certainly did. The only thing to keep in mind with this recipe is to make sure you make a small well in the biscuit and bacon to contain the egg otherwise it will run off and cook separately (which happened to me) if that does happen it’s not a big deal because you can always put the egg back on the biscuit once everything cooks. Top with siracha and enjoy.
Breakfast Biscuit All in One

Preheat oven

Prepare baking sheet with silicone baking mat or parchment paper

Flatten biscuits and create small divets in the center to house the egg

Line outer portion of the divet with shredded cheese, top cheese with bacon strip (you may have to twist the bacon around to make it lay correctly)

Crack egg into center of the bacon strip hole. Top with salt and pepper if desired.

Bake for about 25 minutes or until biscuit is golden brown, bacon and egg are cooked. Top with herbs if desired.
