I originally made this recipe several years ago when I was on a chip and dip kick. More recently I remade the recipe for Cinco de Mayo and was reminded that this is utterly fabulous. This is such a simple recipe that I’m not sure why we buy queso dip at all.
This is such a convenient recipe made in a crock pot which makes it low effort and just a little clean up. If you’re looking for a faster cheese dip feel free to make this recipe on the stove, you’ll just have to make sure to use a non stick spray and be stirring more often. I made this queso dip, a salsa, and a guacamole all at the same time for a chip and dip bar. I also put them into a 7 layer dip and taco recipe! One of my favorite things to be able to reuse my creations in a variety of ways, because I love a shapeshifting leftover.
Queso dip can be made any time for a quick snack, a dinner side, or a dish for a party. Obviously chips and dips are great for a variety of events from things like a super bowl party to a taco tuesday addition. Basically set the crock pot and you can wander off for a little bit while the dip makes itself with very little input for you. Now aren’t those the best kinds of recipes?

This recipe is a delicious super simple crock pot queso dip that makes you forget about store bought cheese in a jar options.

If using crock pot - Dump all ingredients into crock pot and cook on low for 2 hours, stirring often
If making on the stove - use a large pot, lightly spray with non stick spray, add all ingredients, stir often, serve when cheese is melted thoroughly and ingredients are combined (about 30 minutes). If you would like more flavor, allow queso to simmer before serving or slightly cook all ingredients in pot before adding cheese
