Over the weekend I made a dessert for a birthday party. It was partially a recipe and partially just guessing, which is honestly how most of my food creations go. I knew there would be plenty of junk food and other heavy options so I decided to try to make something that wouldn’t get passed over on the dessert table and wouldn’t leave us feeling weighed down – because let’s be honest the highlight of the night was going to be the board games and I wasn’t going to miss out.
Combine cheesecake and cool whip. Starting with the graham cracker layer, alternate with the cool whip and cheesecake mixture adding strawberries to each layer (I forgot to add the strawberries to the first layer, do better than me). Once you’ve almost filled your container start the topping layer, making sure to leave room for a lid or covering since this does need to be in the freezer for several hours. Topping layer consists of cream cheese frosting (I partially melted mine in the microwave so it was able to be poured) covering graham crackers, then sliced strawberries, handful of blueberries and drizzled with cream cheese frosting. Once assembled, refrigerate overnight and serve chilled. Sugar free cheesecake pudding mix and zero sugar cool whip can be substituted for lower sugar options.
The result was a redesigned lightweight layered cheesecake topped with fruit. The recipe is simple, fast, and relatively low budget which is everything I look for when preparing for a party. This recipe does have to sit in the freezer for several hours which is the only downside. But keep that in mind, start it the night before or early morning day of the party. I’m sure if you’re really in a pinch you could throw this dessert together right before the party starts and let it sit in the freezer until time for dessert and it should be ready to go, assuming you have several hour get togethers.
I used a small square glass pan for this recipe and it made 8 – 10 servings. It took about half a container of no bake cheesecake, 3/4 of the cool whip container, 4 graham crackers per layer (1 of them will be broken into pieces if your pan is the same size as mine), a small container of strawberries, a handful of blueberries and about half a container of cream cheese frosting.
The graham crackers will be softened but adding texture by the time it’s served while the strawberries and blueberries will add sweetness.
This is an incredibly simple dessert that comes together quickly and is a real crowd pleaser. The recipe can be easily scaled based on container size or made with lower sugar alternatives.
